&lt;strong&gt;duas listas&lt;/strong&gt; que nos mostram o que precisa ser &lt;strong&gt;feito&lt;/strong&gt; no dia seguinte assim como o que precisa ser &lt;strong&gt;comprado&lt;/strong&gt;. a lista é uma maneira de ajudar a organizar a cabeça, ver de acordo com o cardápio a urgência e previsão de estoque, assim como ajudar aqueles que chegam meio perdidos (somente às vezes) na cozinha...&lt;br /&gt;&lt;br /&gt;...é um meio de comunicação, expressão do chef para com seus cozinheiros, uma lei a ser cumprida, onde cada tarefa riscada representa a segurança de um bom serviço mais tarde. são rotinas diárias, tarefas que nos acompanham sempre, amigas inseparáveis! a terceira lista fica por conta do chef que discrimina os pratos que sairam na noite, quantidades, etc.&lt;br type='text'>surpresa!</title><content type='html'>os últimos meses têm sido bastante interessantes de ver a mudança nos hábitos das pessoas que saem para jantar em santa maria. a surpresa é que, sem perceber, muitos se veêm envolvidos em uma &lt;strong&gt;refeição muito completa&lt;/strong&gt;, com diferentes pratos, podendo desfrutar com calma um bom vinho e ingredientes de &lt;strong&gt;alta qualidade&lt;/strong&gt; de forma variada.&lt;br /&gt;&lt;br /&gt;o costume de comer &lt;strong&gt;diversos pratos&lt;/strong&gt;, um de cada vez, está cada vez mais sendo difundido, e, especificamente aqui no sul, onde queremos comer tudo de uma vez e muito de cada coisa! sim, sabemos, não é fácil mudar hábitos que temos desde pequenos, mas o retorno que estamos tendo é muito positivo em virtude do prazer de nossos clientes ao desfrutar um menu surpresa com até 12 pratos. a idéa não está em simplesmente "matar a fome", mas sim em ingerir alimentos preparados para terem o &lt;strong&gt;máximo do seu sabor&lt;/strong&gt;.&lt;br /&gt;&lt;br /&gt;as porções são reduzidas, afinal é a única forma de uma pessoa se dispor a comer tantos pratos variados. cada prato, cada molho, erva aromática ou ponto de cozimento são elementos a serem analisados, combinados e degustados!&lt;br /&gt;para aqueles que ainda não imaginam como funciona, este foi uma sequência servida ontem à noite:&lt;br /&gt;&lt;br /&gt;&lt;em&gt;Menu Supresa:&lt;/em&gt;&lt;br /&gt;- amuse bouche (ontem foi uma sopa de legumes e camarão com focaccia genovesa)&lt;br /&gt;- bruschetas do chef&lt;br /&gt;- cogumelos recheados&lt;br /&gt;- crepe crocante&lt;br /&gt;- camarões em tempura&lt;br /&gt;- spaghetti ao molho de frutos do mar&lt;br /&gt;- bacalhau ao óleo de cinzas com cebolas caramelizados&lt;br /&gt;- sorbet (para limpar o paladar e inicar a próxima etapa)&lt;br /&gt;- entrecot de cordeiro com legumes ao forno&lt;br /&gt;- pré-doce (mini canolo siciliano)&lt;br /&gt;- cuisine e enfatiza o contraste entre o tamanho pequeno com a intensidade de sabores.&lt;br /&gt;&lt;br /&gt;no coyote temos a nossa amuse bouche que varia conforme o dia, os produtos disponíveis e a criatividade do pessoal. é uma cortesia do nosso chef, e pode ser acompanhada da tradicional foccacia genovesa ou de verduras com especiarias, anchovas...&lt;br /&gt;&lt;br /&gt;ontem servimos um consomê do mar com peperoncino acompanhado da foccacia. para aqueles que gostam de sabores intensos, anote aí:&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Consomê do Mar com Peperoncino&lt;/strong&gt;&lt;br /&gt;- côngrio fresco&lt;br /&gt;- camarão fresco&lt;br /&gt;- alho&lt;br /&gt;- conserva de peperoncino (nossa companheira de mesa!)&lt;br /&gt;- azeite de oliva&lt;br /&gt;- salsa fresca&lt;br /&gt;- sal&lt;br /&gt;- pimenta&lt;br /&gt;- caldo de legumes&lt;br /&gt;- vinho branco&lt;br /&gt;&lt;br /&gt;o preparo é simples, fazer do côngrio e do camarão (mesma proporção) uma pasta, picando com a faca. aquecer a panela, uma boa quantia de azeite de oliva. adiciona-se o peperoncino e o alho picado. quando o alho dourar, soma-se a pasta de peixe e camarão, frita-se bem.&lt;br /&gt;vinho branco, evapora o álcool, caldo de legumes e cozimento por meia hora.&lt;br /&gt;adiciona-se a salsa picada, ajusta-se o sal e a pimenta e está pronta para servir.&lt;br /&gt;&lt;br /&gt;dica do chef?&lt;br /&gt;&lt;br /&gt;a pimenta!&lt;br /&gt;&lt;br /&gt;hoje será servido uma salada de bacalhau com cebola roxa, tomate cereja e batata, provavelmente teremos também a foccacia genovesa e uma
